#1 Fattoush Salad

A salad born out of resourcefulness over culinary prowess in northern lebanon saw day old pita bread, fried in olive oil, then combined with on hand vegetables and herbs.

This humble dish has become a staple in middle eastern cuisine, having featured on our menu since day one, it represents a connection to our family heritage both in nationality and hospitality.

Our version of the fattoush salad takes inspiration from its orgins, but features unique ingredients such as pomegranate seeds, grapes and avocado. a twist on traditon but with the same intention to cut through the rich flavours of middle eastern foods.

you’ll need:

1 cup olive oil
1 piece lebanese bread (8-10 pieces)
1 avocado halved
6 cherry tomatoes, halved
3/4 spanish onion, diced
1/2 cos lettuce, finely chopped
2 radishes, thinly sliced
1/2 pomegranate, remove seeds
1 bottle pomegrante molasses
6 red seedless grapes, halved
1 free ranged egg
1 tbsp sumac
1/2 lemon juiced
1/2 cup extra virgin olive oil

method:

1. Heat olive oil in a large saucepan over medium heat, when hot, add the Lebanese bread, fry until golden, then drain on absorbent paper

2. dressingwisk extra virgin olive oil, sumac and lemon juice til combined

3. combine lettuce, tomato, radish, spanish onion,grapes, pomegranate seeds, fried lebanese bread, toss together with dressing

4. finish salad with soft poached egg, sliced avocado and pomegranate molasses

serves:

1 person stand alone meal or

4 person as side dish
